A hearty and flavorful one-pot dish combining ground beef, potatoes, and vegetables, perfect for a satisfying meal.

Ingredients

Meat

  • 1.5 lbs ground beef (80/20 or 85/15)
  • 1 tablespoon olive oil or vegetable oil (if beef is very lean)

Vegetables

  • 1 large yellow onion, diced (about 1.5 cups)
  • 1 large red bell pepper, diced (about 1.5 cups)
  • 3 cloves garlic, minced
  • 2 lbs Yukon Gold potatoes, peeled and diced (about 4-5 medium, ½-inch cubes)
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon dried thyme (or dried oregano)
  • 1 tablespoon Worcestershire sauce
  • 0.5 cup beef broth (low sodium preferred)

Seasonings

  • to taste Salt (start with 1 teaspoon)
  • to taste Black pepper (start with ½ teaspoon)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Optional toppings

  • as desired Fried eggs, hot sauce, shredded cheese

Instructions 

  • Peel and dice potatoes into ½-inch cubes; rinse and set aside.
  • Cook ground beef in a large skillet over medium-high heat until browned, then drain excess fat if needed.
  • Add onion, bell pepper, and garlic; sauté until softened, about 5-7 minutes.
  • Stir in potatoes, spices, Worcestershire, and broth; simmer covered for 15-20 minutes until potatoes are tender.
  • Uncover, increase heat, and cook for 5-10 minutes to develop a crust; stir occasionally.

Notes

For extra flavor, add a splash of hot sauce or top with a fried egg.
