A quick and delicious one-pot pasta dish with a creamy tomato sauce, perfect for a comforting weeknight dinner.

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 3 cups chicken stock (or water)
  • 1 15-ounce can diced tomatoes, undrained
  • 12 ounces short pasta shapes (spirals or bow ties)
  • ½ cup grated Parmesan cheese
  • ¼ cup cream cheese

Instructions 

  • Heat olive oil in a large pot and sauté onion and garlic until softened.
  • Add chicken stock and diced tomatoes; bring to a boil.
  • Stir in pasta, season with salt and pepper, then simmer until tender.
  • Remove from heat and mix in Parmesan and cream cheese until creamy.
