A quick and flavorful one-pot pasta dish with a creamy tomato sauce, perfect for a comforting weeknight dinner.

box short pasta shapes

grated Parmesan

cream cheese (OR ricotta)

Chopped flat leaf parsley (optional)
Instructions
Heat olive oil in a large pot and sauté onion, garlic, and sun-dried tomatoes until softened (~2 min).
Add tomato paste and Italian seasoning; cook for 1 min. Pour in broth, add diced tomatoes and pasta, season with salt and pepper.
Bring to a boil, then simmer 10-15 min until pasta is al dente, adding more broth if needed.
Remove from heat, stir in Parmesan and cream cheese, let sit 3-4 min before serving.
Notes
For a richer flavor, add a splash of cream or extra Parmesan.
