A quick and flavorful one-pot meal combining ground meat, peppers, rice, and cheese for a satisfying dinner.

Ingredients

Meat

  • 1 pound ground beef or turkey

Vegetables

  • 3 diced bell peppers (mixed colors)
  • 1 diced medium onion

Aromatics

  • 3 cloves garlic (minced)

Grains

  • 1 cup rice (white or brown)

Canned Goods

  • 1 can (15 ounces) crushed tomatoes

Liquids

  • 1 cup water or broth

Spices & Oils

  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Toppings & Garnishes

  • 0.5 cup shredded cheese for topping
  • to taste Fresh parsley or red chili flakes for garnish

Instructions 

  • Dice peppers and onion, mince garlic, and prepare ingredients.
  • Heat oil in skillet, sauté garlic and onion until fragrant, 2-3 min.
  • Add ground meat, cook until browned, then drain excess fat.
  • Stir in peppers, spices, cook 3-5 min, then add rice, tomatoes, and water.
  • Simmer covered 20-25 min until rice is tender, then top with cheese and garnish.

Notes

For a vegetarian version, substitute the meat with beans or vegetables.
