Instructions
Preheat oven to 350°F (175°C). Grease pan and line with parchment.
Make flax egg by combining ground flax and water; let sit.
Mix orange zest and sugar until fragrant. Add olive oil, almond extract, orange juice, soy milk, and flax egg; combine.
Sift dry ingredients and fold into wet mixture until just combined.
Pour batter into pan and bake for 25-35 minutes. Cool before glazing.
Whisk glaze ingredients and drizzle over cooled cake. Garnish with optional slices or almonds.
