Ingredients

Wet ingredients

  • 2 tablespoons ground flax
  • 3 tablespoons water (for flax egg)
  • 2 tablespoons orange zest
  • ¾ cup sugar
  • ½ cup olive oil
  • 1 teaspoon almond extract
  • 3 tablespoons orange juice
  • cup soy milk

Dry ingredients

  • 1 ¾ cups AP flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda

Glaze

  • 1 cup powdered sugar (for glaze)
  • ½ teaspoon almond extract (for glaze)
  • 3 tablespoons orange juice (for glaze)

Optional Garnishes

  • as desired orange slices or zest (optional)
  • as desired slivered toasted almonds (optional)

Instructions 

  • Preheat oven to 350°F (175°C). Grease pan and line with parchment.
  • Make flax egg by combining ground flax and water; let sit.
  • Mix orange zest and sugar until fragrant. Add olive oil, almond extract, orange juice, soy milk, and flax egg; combine.
  • Sift dry ingredients and fold into wet mixture until just combined.
  • Pour batter into pan and bake for 25-35 minutes. Cool before glazing.
  • Whisk glaze ingredients and drizzle over cooled cake. Garnish with optional slices or almonds.

Notes

Ensure not to overmix the batter for a light texture.
