A moist and flavorful citrus cake infused with orange zest and olive oil, perfect for a light dessert or snack.

Ingredients

Dry ingredients

  • 240 g all purpose flour
  • 1 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 0.5 teaspoon salt

Wet ingredients

  • 250 g granulated sugar
  • 3 large eggs (room temperature)
  • 237 ml olive oil
  • 118 ml orange juice (room temperature)
  • 118 ml whole milk (room temperature)
  • 25 g granulated sugar for topping (optional)

Instructions 

  • Preheat oven to 350°F (177°C). Grease and line a 9-inch (23 cm) pan.
  • Whisk dry ingredients together. Beat sugar and orange zest until wet sand consistency. Add eggs and whip until thick and yellow. Stream in olive oil, then fold in orange juice and milk. Mix dry ingredients in until just combined.
  • Pour batter into prepared pan. Optional: sprinkle with sugar for a crackly crust.
  • Bake for 40-45 minutes until golden and a toothpick comes out clean. Cool in pan for 15-20 minutes, then transfer or serve directly.
  • Garnish with powdered sugar and orange slices if desired. Slice and enjoy!

Notes

Use fresh oranges for the zest and juice for best flavor.
