Delight in these creamy Oreo ice cream sandwiches with crunchy cookie layers, perfect for a cool treat.

Ingredients

Cookies and Crust

  • 600 g whole oreo cookies (about 50 cookies)
  • 170 g unsalted butter (melted)

Ice Cream Filling

  • 500 g heavy cream
  • 1 tablespoon vanilla extract
  • 150 g condensed milk

Instructions 

  • Line a 9x9" pan with parchment. Crush oreos into fine crumbs, reserving 100g for topping.
  • Mix remaining oreo crumbs with melted butter and press into the pan. Freeze while preparing the filling.
  • Whip heavy cream and vanilla until stiff peaks. Fold in condensed milk and reserved oreo crumbs.
  • Pour the ice cream mixture over the crust, freeze 1-2 hours until firm.
  • Spread remaining oreo crumbs on top, press gently, and freeze for at least 6 hours or overnight.
  • Lift out, cut into 8 slices, and serve immediately or freeze for later.

Notes

For cleaner cuts, run the knife under hot water before slicing.
