A delicious and elegant salmon dish featuring a creamy Parmesan sauce with sun-dried tomatoes and spinach.

Ingredients

Main ingredients

  • 2 fillets salmon fillets, skin-on
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • to taste Salt and pepper
  • minced optional Garlic (optional)

Instructions 

  • Heat 2 tablespoons of olive oil in a skillet over medium-high heat.
  • Season salmon fillets with salt and pepper, then place skin-side down in the skillet. Cook for 4-5 minutes.
  • Flip the fillets and cook for another 3-4 minutes. Remove and keep warm.
  • Add minced garlic (if using) to the skillet and sauté for 30 seconds, then pour in heavy cream and simmer.
  • Stir in Parmesan cheese, sun-dried tomatoes, and spinach; cook until spinach wilts. Spoon sauce over salmon.

Notes

For extra flavor, add a squeeze of lemon before serving.
