Ingredients

Protein

  • 8 ounces tilapia fillets (Two 4-ounce fillets)
  • 1 tablespoon butter
  • 2 tablespoons extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1 medium lemon (Zest and juice)
  • 0.5 teaspoon kosher or sea salt

Salad

  • 4 cups baby arugula
  • 0.5 cup halved cherry tomatoes

Instructions 

  • Season tilapia with salt and pepper.
  • Cook tilapia in butter over medium-high heat until golden, about 1-2 minutes per side. Remove and set aside.
  • Whisk olive oil, garlic, lemon zest, lemon juice, salt, and pepper to make vinaigrette.
  • Toss arugula, tomatoes, and vinaigrette. Plate the salad and top with tilapia.

Notes

Ensure tilapia is cooked through but not overdone for best texture.
