Pasta with Chipotle Cream Sauce

A flavorful and creamy pasta dish with a smoky chipotle kick, perfect for a quick and satisfying meal.

Ingredients

pasta

  • 1 pound pasta of choice (fettuccini)

canned chipotle peppers in adobo sauce

  • 7 oz chipotle peppers in adobo sauce (use less if less spicy)

butter

  • 2 tablespoons butter

heavy cream

  • 2.5 cups heavy cream

garlic

  • 4 cloves garlic (minced)

kosher salt and pepper

  • kosher salt, pepper (to taste)

parmesan cheese

  • 1 cup shredded parmesan cheese

optional: cooked chicken, shrimp, or steak

  • cooked chicken, shrimp, or steak (if desired)

Instructions 

  • Cook pasta in salted water, drain, and rinse with cold water.
  • Finely mince the chipotle peppers.
  • In the same pot, melt butter, then add heavy cream, minced chipotles, garlic, salt, and pepper. Bring to a boil, then simmer for 5-6 minutes. Stir in parmesan during the last minute.
  • Mix in cooked pasta and adjust seasoning as needed. Add cooked meat if desired.

Notes

Adjust spice level by using fewer chipotle peppers.
