Ingredients

1poundpasta of choice (fettuccini)
canned chipotle peppers in adobo sauce
7ozchipotle peppers in adobo sauce(use less if less spicy)
butter
2tablespoonsbutter
heavy cream
2.5cupsheavy cream
garlic
4clovesgarlic (minced)
kosher salt and pepper
kosher salt, pepper(to taste)
parmesan cheese
1cupshredded parmesan cheese
optional: cooked chicken, shrimp, or steak
cooked chicken, shrimp, or steak(if desired)
Instructions
Cook pasta in salted water, drain, and rinse with cold water.
Finely mince the chipotle peppers.
In the same pot, melt butter, then add heavy cream, minced chipotles, garlic, salt, and pepper. Bring to a boil, then simmer for 5-6 minutes. Stir in parmesan during the last minute.
Mix in cooked pasta and adjust seasoning as needed. Add cooked meat if desired.
Notes
Adjust spice level by using fewer chipotle peppers.
