Instructions
Preheat oven to 375°F (190°C) and prepare a 12-cup muffin tin.
Whisk dry ingredients in a large bowl. Mix wet ingredients in a separate bowl until smooth.
Pour wet into dry, fold gently, then fold in diced peaches.
Combine crumble ingredients with cold butter until coarse crumbs form. Fill muffin cups 3/4 full, sprinkle crumble on top.
Bake for 25-30 minutes until golden and a toothpick comes out clean. Cool slightly before serving.
Notes
For best results, do not overmix the batter to keep muffins tender.
