Instructions
Preheat oven to 150°C. Line a 24cm round cake tin with baking paper and lightly grease.
Peel, core, and quarter pears. Melt butter and brown sugar, pour into the tin, then arrange pears on top.
Sift flour, ginger, baking soda, and salt; set aside. Cream butter and sugar until light, then add eggs, syrup, sour cream, and ginger, beating well.
Fold in dry ingredients, pour batter into the tin, and bake for 70–80 minutes until a knife comes out clean.
Cool for 5 minutes, then invert onto a wire rack to cool completely, pear side up.
Notes
Ensure pears are evenly arranged for a decorative presentation.
