A flavorful and easy-to-make chicken fried rice recipe with a perfect balance of savory ingredients and fresh vegetables.

Ingredients

Oil

  • 2 tsp sesame oil
  • 1 tbsp neutral oil (avocado oil preferred) (for stir-frying)

Chicken

  • 0.75 lb chicken breasts (cut into 1/2-inch bite-sized pieces)

Sauces and seasonings

  • 2.5 tbsp soy sauce
  • 1.5 tbsp butter (Kerrygold salted preferred)
  • 2 tsp lemon juice

Vegetables

  • 1 cup frozen vegetables (peas and carrots)
  • 1/2 cup white onion (finely diced into 1/4-inch pieces)
  • 1 clove garlic (minced)
  • 1 tsp ginger (grated)

Eggs

  • 2 pcs eggs

Cooked Rice

  • 4 cups cold cooked rice (day-old preferred)
  • 3.5 tbsp soy sauce (Kikkoman Less Sodium)
  • 0.75 tsp sesame oil

Garnish

  • to taste sesame seeds

Instructions 

  • Heat sesame oil and neutral oil in a wok or large skillet over medium-high heat.
  • Add chicken pieces and cook until browned and cooked through, about 5-7 minutes.
  • Add garlic, ginger, and diced onion; cook for 2 minutes until fragrant.
  • Push ingredients to one side, scramble eggs in the empty space, then mix everything together.
  • Add cooked rice, frozen vegetables, soy sauce, and butter; stir-fry for 3-4 minutes until heated through. Garnish with sesame seeds.

Notes

Use day-old rice for best texture and flavor.
