Ingredients

Pasta

  • 1 pound pasta
  • 1 cup basil pesto (homemade or store-bought)
  • 2 balls burrata cheese (about 8 ounces total)
  • 2 tablespoons extra-virgin olive oil
  • 2 pints cherry or grape tomatoes (about 22 ounces)
  • 4 cloves garlic (minced or pressed)
  • ½ teaspoon crushed red pepper flakes (or more/less to taste)
  • ½ teaspoon fine sea salt
  • ½ teaspoon freshly-ground black pepper

Instructions 

  • Cook the pasta in salted boiling water until al dente, reserving 1 cup of pasta water before draining.
  • Heat olive oil in a large pan, add tomatoes, and blister for 7-10 minutes until skins split.
  • Add garlic, red pepper flakes, salt, and black pepper; cook for 1 minute until fragrant. Remove from heat.
  • Toss cooked pasta with pesto, adding reserved pasta water to loosen. Gently mix in tomato mixture.
  • Transfer to bowls, tear burrata over the top, add optional toppings, and serve immediately.

Notes

Use high-quality pesto and fresh burrata for best flavor. Adjust red pepper flakes to taste.
