1cupbasil pesto(homemade or store-bought)
2ballsburrata cheese(about 8 ounces total)
2tablespoonsextra-virgin olive oil
2pintscherry or grape tomatoes(about 22 ounces)
4clovesgarlic(minced or pressed)
½teaspooncrushed red pepper flakes(or more/less to taste)
½teaspoonfine sea salt
½teaspoonfreshly-ground black pepper
Instructions
Cook the pasta in salted boiling water until al dente, reserving 1 cup of pasta water before draining.
Heat olive oil in a large pan, add tomatoes, and blister for 7-10 minutes until skins split.
Add garlic, red pepper flakes, salt, and black pepper; cook for 1 minute until fragrant. Remove from heat.
Toss cooked pasta with pesto, adding reserved pasta water to loosen. Gently mix in tomato mixture.
Transfer to bowls, tear burrata over the top, add optional toppings, and serve immediately.
