Pesto Turkey Flatbread

A delicious flatbread topped with pesto, roasted turkey, fresh vegetables, and cheese, perfect for a quick and flavorful meal.

Ingredients

Dough

  • 180 ml warm water (¾ cup)
  • 250 g bread flour (8.8oz / 2 scant cups)
  • 1 tsp dry instant yeast
  • 1 tsp sugar
  • 0.5 tsp salt
  • 1 tbsp olive oil (notes 1)

Toppings

  • cups fresh basil pesto
  • 1 cup shredded roasted turkey
  • cup green capsicum (bell pepper) strips
  • ½ small red onion, finely sliced
  • 7 balls bocconcini (or grated mozzarella)

Seasoning

  • to taste Salt and pepper

Instructions 

  • Mix warm water and yeast; let sit 5 minutes.
  • Combine flour, sugar, salt, add yeast mixture and oil; knead until smooth. Let rise for 30-60 minutes.
  • Divide dough into 3, roll into flatbreads, place on polenta-dusted trays, and make dimples. Brush with olive oil.
  • Spread pesto on flatbreads, then top with onion, capsicum, turkey, and cheese. Season with salt and pepper.
  • Bake at 230°C (450°F) for 12-15 minutes until golden. Drizzle with remaining pesto and serve.

Notes

For extra flavor, brush the crust with garlic-infused olive oil before baking.
