A creamy, cheesy potato casserole with a golden crust, perfect for comforting family dinners.
Ingredients

finely chopped yellow onion

whole milk

Potatoes

yukon gold potatoes (peeled, cut into ⅛" thick slices)
Cheese

shredded gruyere cheese

shredded sharp cheddar cheese

chopped chives
Instructions
Preheat oven to 400ºF (200ºC) and prepare a casserole dish.
Make the cream sauce: melt butter, sauté garlic and onions, add flour, then whisk in milk until thickened. Season with salt, pepper, and nutmeg.
Stir in half of the cheeses into the sauce.
Layer potatoes and cheese sauce in the dish, topping with remaining cheeses.
Bake covered for 30 minutes, then uncover and bake until bubbly and browned, 20-25 minutes. Cool slightly and garnish with chives before serving.
Notes
For a crispier top, broil for the last 2 minutes.
