A creamy, cheesy potato casserole with a golden crust, perfect for comforting family dinners.

Ingredients

Dairy and Aromatics

  • ¼ cup unsalted butter
  • 1 tablespoon minced garlic
  • ½ cup finely chopped yellow onion
  • ¼ cup all-purpose flour
  • 2 cups whole milk
  • ¾ teaspoon kosher salt
  • ½ teaspoon black pepper
  • teaspoon nutmeg

Potatoes

  • 2 pounds yukon gold potatoes (peeled, cut into ⅛" thick slices)

Cheese

  • 1 cup shredded gruyere cheese
  • 1 cup shredded sharp cheddar cheese
  • 2 teaspoons chopped chives

Instructions 

  • Preheat oven to 400ºF (200ºC) and prepare a casserole dish.
  • Make the cream sauce: melt butter, sauté garlic and onions, add flour, then whisk in milk until thickened. Season with salt, pepper, and nutmeg.
  • Stir in half of the cheeses into the sauce.
  • Layer potatoes and cheese sauce in the dish, topping with remaining cheeses.
  • Bake covered for 30 minutes, then uncover and bake until bubbly and browned, 20-25 minutes. Cool slightly and garnish with chives before serving.

Notes

For a crispier top, broil for the last 2 minutes.
