These delicious breakfast burritos are packed with protein and can be prepared ahead, frozen, and reheated for a quick, nutritious start to your day.

Vegetables
1cupdiced bell peppers
1cupdiced onions
2cupsdiced yellow potatoes
Meat
1lblean ground meat (turkey, chicken, or beef)
Egg mixture
6largeeggs
4largeegg whites
0.5cupcottage cheese
Cheese
1cupshredded cheddar cheese
Seasonings & Oils
2tablespoonsolive oil
1teaspoonpaprika
1teaspoongarlic powder
1teaspoononion powder
Tortillas & Extras
10largeburrito-sized tortillas
Your favorite sauce (e.g., salsa, hot sauce) as neededsauce
0.25cupfresh cilantro, chopped
Instructions
Preheat oven to 400°F (200°C). Roast bell peppers, onions, and potatoes on a sheet pan for 20-25 minutes.
Cook ground meat with paprika, garlic, onion powder, salt, and pepper until done, about 10-15 minutes.
Blend eggs, egg whites, and cottage cheese until smooth. Pour over cooked veggies and meat, top with cheese, and bake until eggs are set, 12-15 minutes.
Cool slightly, slice into 10 portions. Fill tortillas with portions, add sauce and cilantro, then roll into burritos.
Wrap burritos in parchment or foil and freeze. Reheat in microwave for 3-4 minutes before serving.
