These delicious and healthy pumpkin protein balls are perfect for a quick snack or post-workout treat, combining cozy fall flavors with a boost of protein.

Ingredients

Dry ingredients

  • 1 cup rolled oats (gluten free if desired)
  • 2 scoops vanilla protein powder
  • 1 tsp pumpkin pie spice

Wet ingredients

  • 1/2 cup almond butter
  • 1/3 cup pumpkin puree
  • 1/4 cup raw honey (sub maple syrup for vegan)

Instructions 

  • Combine all ingredients in a large bowl.
  • Use a small cookie scoop to form approximately 24 balls, then roll with your hands and place on a plate.
  • Freeze for 10 minutes before serving.
