Ingredients

Pasta

  • 10 oz pasta (e.g., Barilla penne or fusilli) (preferably cooked al dente)

Chicken

  • 3 pieces chicken breasts (sliced into 1-inch strips)

Seasonings

  • to taste salt
  • to taste pepper
  • 1 tbsp flour

Fats and Oils

  • 1.5 tbsp butter (Kerrygold unsalted)
  • 1.5 tbsp olive oil

Garlic

  • 5 cloves garlic, freshly minced (for best flavor)

Broth and Liquids

  • 0.5 cup chicken broth (low-sodium)
  • 0.5 tsp lemon juice
  • 0.5 tsp dijon mustard (adds subtle tang)
  • 0.5 tsp italian seasoning
  • 0.25 tsp red pepper flakes

Dairy

  • 1 cup cream

Vegetables

  • 5 oz spinach

Cheese

  • 3/4 cup parmesan cheese, freshly grated (for smoother melt)

Instructions 

  • Cook pasta according to package instructions; set aside.
  • Sauté chicken strips in olive oil until cooked through; remove and set aside.
  • In the same pan, add butter and minced garlic; cook until fragrant.
  • Add flour, then stir in chicken broth, lemon juice, dijon mustard, Italian seasoning, and red pepper flakes; simmer until slightly thickened.
  • Stir in cream, spinach, cooked chicken, and Parmesan; cook until spinach wilts and sauce thickens. Toss with cooked pasta and serve.

Notes

Use fresh spinach for best flavor and texture.
