A refreshing and simple dessert combining ripe mangoes, tapioca pearls, coconut milk, and condensed milk for a delightful treat.

Ingredients

  • 2 pieces Fresh ripe mangos (for blending and dicing)
  • 1 cup Small tapioca pearls (uncooked)
  • 1/2 cup Sweetened condensed milk
  • 1 cup Whole fat coconut milk
  • Optional Fresh mint leaves (optional garnish)

Instructions 

  • Boil 5 cups (1250 ml) water, add tapioca pearls, and cook for 10 minutes. Cover and rest for 10-15 minutes until translucent.
  • Strain and rinse tapioca, then transfer to a bowl. Mix in coconut milk and set aside.
  • Blend peeled, pitted, sliced mangoes with condensed milk until smooth.
  • Dice the remaining mango into 1-cm cubes and set aside.
  • Divide mango puree into bowls, top with coconut sago, add mango cubes, and garnish with mint if desired. Serve cold.

Notes

For extra flavor, chill the dessert before serving.
