Ingredients

Dry ingredients

  • 1 1/4 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 tbsp unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Wet ingredients

  • 1/2 cup vegetable oil
  • 1/2 cup buttermilk
  • 1 large egg
  • 1/2 tbsp white vinegar
  • 1 tsp vanilla extract
  • 1 tbsp red food coloring

Frosting

  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions 

  • Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  • Mix dry ingredients in a bowl. In another, beat egg and add wet ingredients. Combine until smooth.
  • Fill cupcake liners 2/3 full with batter. Bake for 18–20 minutes. Cool on wire rack.
  • Beat cream cheese and butter until smooth. Add powdered sugar and vanilla; beat until fluffy.
  • Frost cooled cupcakes and garnish as desired.

Notes

Ensure cupcakes are fully cooled before frosting to prevent melting.
