This Rich Creamy Salmon Florentine is a delightful dish featuring tender salmon fillets in a luscious cream sauce with fresh spinach and parmesan.

Ingredients

  • 2 fillets salmon (or skin-on, as preferred)
  • 1 tablespoon olive oil or butter
  • 3 cloves garlic (minced)
  • 1 cup heavy cream (or coconut cream for dairy-free)
  • ½ cup parmesan cheese (freshly grated)
  • 2 cups fresh spinach (roughly chopped)
  • ½ teaspoon italian seasoning
  • 1 tablespoon butter
  • 1 tablespoon lemon juice (optional, for brightness)
  • 1 serving cooked pasta (fettuccine or penne)
  • 1 serving crusty garlic bread
  • 1 serving side salad (for a complete meal)

Instructions 

  • Pat salmon dry and season with salt and pepper.
  • Heat oil or butter in a skillet and sear salmon for 3 minutes per side.
  • Add butter and garlic to the pan, sauté until fragrant.
  • Pour in cream, stir in Parmesan and Italian seasoning, and let thicken.
  • Toss in spinach and cook until wilted, then return salmon to the pan.
  • Plate salmon over pasta, garnish with lemon juice and more Parmesan if desired.
