Ingredients

Cornbread ingredients

  • 1.5 cups organic yellow cornmeal
  • 0.5 cup tapioca flour
  • 2.5 tsps. GF baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 4 tbsp butter, melted
  • 0.5 cup sour cream
  • 0.75 cup half & half cream
  • 3 eggs eggs

Stuffing ingredients

  • 4 slices gluten free bread
  • 1 medium yellow onion
  • 2 stalks celery
  • 3 cloves garlic
  • 6 tbsp butter
  • 0.5 tsp thyme
  • 0.5 tsp rosemary
  • 1 tsp dried rubbed sage
  • 0.5 tsp salt
  • 3.5 cups veggie broth
  • 2 eggs eggs

Instructions 

  • Preheat oven to 375°F (190°C). Grease an 8x8 inch baking pan.
  • Mix dry ingredients for cornbread, then combine with wet ingredients. Bake for 20 minutes.
  • Cube cornbread and bread slices; dry in oven for 10 minutes. Set aside.
  • Sauté onion, celery, and garlic in butter with herbs. Mix with bread cubes.
  • Whisk eggs and broth, combine with bread mixture. Bake covered for 40-45 minutes.

Notes

For best flavor, let the stuffing rest for 10 minutes before serving.
