A quick and delicious flatbread topped with flavorful salmon and cheese, perfect for a light meal or appetizer.

Ingredients

Main Ingredients

  • 1/2 pint salmon, drained
  • 1/3 cup avocado mayonnaise
  • 1/3 cup pico de gallo
  • 3 small sweet pickles (finely chopped)
  • 1 stalk celery (finely chopped)
  • to taste Salt and pepper
  • 1 cup sharp cheddar cheese
  • 3-4 small flatbread (toasted on both sides)

Instructions 

  • Mix salmon, mayonnaise, pico de gallo, pickles, and celery in a bowl. Season with salt and pepper.
  • Preheat oven to broil. Toast flatbreads on both sides for about 1 minute each.
  • Spread salmon mixture on flatbreads, top with shredded cheese, and broil until cheese melts, about 1 minute.

Notes

For extra flavor, add fresh herbs or a squeeze of lemon.
