A quick and flavorful dish combining tender salmon, fresh pesto, and pasta for a satisfying meal.

Ingredients

Protein

  • 2 large salmon filets (skin-side down if applicable)
  • 1-2 teaspoons olive oil
  • 1 teaspoon lemon juice (from 1/2 lemon)
  • to taste kosher salt and black pepper

Pasta

  • 8 ounces dried pasta

Sauce

  • 2/3 cup pesto (jarred or homemade)
  • 1/4 cup Parmesan cheese (grated)

Instructions 

  • Bake salmon at 400°F for 20 minutes, brushing with olive oil and lemon juice, then season with salt and pepper.
  • Cook pasta in salted boiling water until al dente, then drain and reserve some pasta water.
  • Break salmon into pieces and mix with cooked pasta, pesto, Parmesan, and black pepper. Add reserved pasta water to loosen sauce if needed.
  • Serve pasta topped with salmon pieces. Enjoy!

Notes

For extra flavor, add fresh herbs or a squeeze of lemon before serving.
