A quick and flavorful dish combining tender salmon, fresh pesto, and pasta for a satisfying meal.

Ingredients

Protein

  • 2 large salmon filets (skin-side down if applicable)
  • 1-2 teaspoons olive oil
  • 1 teaspoon lemon juice (from 1/2 lemon)
  • to taste kosher salt and black pepper

Pasta

  • 8 ounces dried pasta

Sauce

  • 2/3 cup pesto (jarred or homemade)
  • 1/4 cup Parmesan cheese (grated)

Instructions 

  • Bake salmon at 400°F for 20 minutes until flaky and internal temp reaches 145°F.
  • Cook pasta in salted boiling water until al dente, then drain.
  • Mix cooked pasta with pesto, Parmesan, and black pepper. Add reserved pasta water if needed.
  • Break cooked salmon into bite-sized pieces and combine with pasta or serve on top.

Notes

For extra flavor, add fresh herbs or a squeeze of lemon before serving.
