A decadent and easy-to-make slab pie combining tart apples, rich caramel, and a flaky crust, perfect for sharing.

Ingredients

Dough

  • 5 cups all-purpose flour (spooned and leveled, plus more for work surface)
  • 2 tablespoons granulated sugar
  • 2 teaspoons kosher salt
  • 2 cups cold unsalted butter (cut into pieces)
  • 2 tablespoons unsalted butter

Filling

  • 3.5 pounds apples (peeled and sliced 1/4-inch thick)
  • 3/4 cup store-bought sea salt caramel sauce (plus more for serving)
  • 3/4 cup light brown sugar (packed)
  • 1 teaspoon kosher salt
  • 1 tablespoon lemon juice
  • 1/4 teaspoon ground cinnamon
  • Pinch freshly grated nutmeg
  • 6 tablespoons cornstarch
  • 2 teaspoons pure vanilla extract
  • 1 large egg (beaten)
  • 1 tablespoon coarse sugar

For Serving

  • Vanilla ice cream (for serving)

Instructions 

  • Prepare the crust by mixing flour, sugar, and salt, then cut in cold butter until crumbly. Chill the dough.
  • Roll out the dough and fit into a baking pan. Spread apples, caramel sauce, brown sugar, salt, lemon juice, cinnamon, and nutmeg over the crust.
  • Sprinkle cornstarch and vanilla over the filling, then cover with the top crust or lattice. Brush with beaten egg and sprinkle coarse sugar.
  • Bake at 375°F (190°C) for 45 minutes until golden and bubbly. Let cool slightly before serving with vanilla ice cream.

Notes

For best results, use a mix of tart and sweet apples for a balanced flavor.
