A quick and flavorful one-pan meal combining sausage with colorful vegetables, perfect for a satisfying dinner.

Ingredients

Main ingredients

  • 1 tbsp olive oil
  • 500 g sausage (chicken, turkey, or smoked sausage), sliced
  • 1 large onion, sliced
  • 2 bell peppers bell peppers, sliced
  • 2 zucchini zucchinis, sliced
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • to taste Salt and pepper Salt and pepper
  • optional Red pepper flakes Red pepper flakes
  • optional Fresh Parmesan cheese Fresh Parmesan cheese
  • optional Fresh parsley Fresh parsley

Instructions 

  • Heat olive oil in a skillet, cook sausage until browned, then remove.
  • Sauté onions, peppers, and zucchini until tender with some crunch.
  • Add garlic and cherry tomatoes, cook briefly until fragrant and softened.
  • Season with Italian seasoning, paprika, salt, and pepper, then return sausage and toss.
  • Garnish with parsley or Parmesan if desired, then serve.

Notes

Feel free to add red pepper flakes for extra heat or top with cheese for added flavor.
