A quick and flavorful one-pan meal combining sausage, corn, and fresh vegetables, perfect for a weeknight dinner.

Ingredients

Vegetables

  • 2 cups corn kernels (from 3 cooked ears)
  • 1 tablespoon olive oil

Sausage

  • 12 oz cooked sausage (like cajun or smoked)

Vegetables

  • 1 large red bell pepper (diced)
  • 1 large zucchini (sliced)
  • 1/2 teaspoon chili powder

Garnish

  • to taste Fresh cilantro (for garnish)

Instructions 

  • Heat olive oil in a skillet over medium heat.
  • Sauté red bell pepper and zucchini for 5 minutes until softened.
  • Add cooked sausage; cook for 3–4 minutes until heated through.
  • Stir in corn and chili powder; cook for 5 minutes.
  • Remove from heat and garnish with chopped cilantro before serving.

Notes

Feel free to add hot sauce for extra flavor.
