  • 1.5 lb zucchini (the star of the dish, adding color and moisture)
  • 2 cups cooked groats (hearty and nutritious; brown rice or quinoa are great alternatives)
  • 1 can (14.5 oz) diced tomatoes (brings acidity and a juicy element to balance the flavors)
  • 1/2 tsp oregano (adds a fragrant herbal note)
  • 1/2 tsp smoked paprika (contributes a warm, smoky flavor)
  • 1/2 cup fresh basil (for a burst of freshness)

Instructions 

  • Heat olive oil in a skillet and cook ground turkey, onion, and garlic until browned and translucent.
  • Add zucchini, cooked groats, diced tomatoes, oregano, and smoked paprika. Cook until zucchini is tender.
  • Remove from heat, fold in basil and shredded cheddar until melted.
  • Transfer to a baking dish and bake at 350°F (175°C) for 10 minutes until bubbly and golden.

Notes

For a lighter version, use reduced-fat cheese and lean ground chicken.
