Enjoy flavorful Greek-inspired chicken gyros cooked on a sheet pan, topped with fresh toppings and served with homemade tzatziki sauce.

Ingredients

Chicken

  • 2 lbs boneless skinless chicken thighs (cut into 2-inch pieces)
  • 2 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 2 teaspoons kosher salt
  • 2 teaspoons dried oregano
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • Zest of 1 lemon lemon zest

Pitas and toppings

  • 5 pieces fresh pitas or naan (warmed)

Toppings

  • to taste Feta cheese, sliced tomato, pickled red onion, shredded romaine lettuce, fresh dill
  • 1 English cucumber shredded and pressed dry
  • 1.5 cups full fat plain Greek yogurt
  • 1 tablespoon olive oil
  • 2 teaspoons lemon juice
  • 1 clove garlic (minced)
  • to taste Kosher salt

Instructions 

  • Preheat oven to 425°F (220°C). Toss chicken with oil, garlic, salt, oregano, mustard, honey, and lemon zest. Skewer tightly and bake for 20 minutes, flipping halfway.
  • While baking, prepare tzatziki by mixing yogurt, olive oil, lemon juice, garlic, and salt.
  • Warm pitas or naan. Remove chicken from skewers, assemble gyros with toppings and tzatziki.

Notes

For extra flavor, marinate the chicken longer or add fresh herbs to the tzatziki.
