A quick and flavorful sheet pan dinner featuring tender honey garlic salmon paired with roasted zucchini and corn, perfect for a healthy weeknight meal.

Ingredients

Protein

  • 4 fillets salmon fillets (about 6 ounces each)

Seasonings

  • Salt and black pepper Salt and black pepper (to taste)
  • 3 tablespoons honey
  • 3 cloves garlic (minced)
  • 3 tablespoons olive oil (divided)
  • 1 tablespoon lemon juice (fresh)
  • 1 teaspoon Dijon mustard
  • ½ teaspoon paprika

Vegetables

  • 2 medium zucchini (sliced into half moons)
  • 2 ears corn (kernels removed, or 2 cups corn kernels)
  • 1 cup cherry tomatoes (optional)

For serving

  • to taste Fresh parsley
  • to serve Lemon wedges
  • optional Red pepper flakes

Instructions 

  • Preheat oven to 400°F (200°C) and line a sheet pan with parchment paper.
  • Mix honey, garlic, 2 tbsp olive oil, lemon juice, Dijon mustard, paprika, salt, and pepper to make the sauce.
  • Toss zucchini, corn, and tomatoes with remaining olive oil, salt, and pepper; spread on the pan.
  • Place salmon in the center, spoon sauce over, and bake for 12-15 minutes until cooked and vegetables are tender.
  • Garnish with parsley, lemon wedges, and red pepper flakes before serving.

Notes

Ensure not to overcook the salmon for best texture.
