Ingredients

Oil

  • 1 tablespoon oil

Beef

  • 1 lb beef stewing meat

Vegetables

  • 1 small onion (finely diced)
  • 2 teaspoons minced garlic
  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon black pepper
  • 3 large carrots (peeled and chopped)
  • 2 ribs celery (chopped)

Grains

  • 1/2 cup pearl or pot barley (rinsed)

Tomato paste

  • 2 tablespoons tomato paste

Bay leaves

  • 2 bay leaves bay leaves

Broth

  • 4 cups low sodium beef broth

Fresh parsley

  • as desired fresh parsley (for serving)

Instructions 

  • Heat oil in a large pan over medium-high heat. Brown beef in batches, then transfer to slow cooker.
  • Sauté onions in the same pan until translucent, then add garlic, salt, Italian seasoning, and pepper; cook 1 minute.
  • Add onions, carrots, celery, barley, tomato paste, bay leaves, and beef broth to the slow cooker. Stir well.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours until vegetables and barley are tender.
  • Stir in fresh parsley, season to taste, and serve hot.

Notes

For a richer flavor, let the soup simmer longer or add a splash of red wine during cooking.
