Instructions
Heat oil in a large pan over medium-high heat. Brown beef in batches, then transfer to slow cooker.
Sauté onions in the same pan until translucent, then add garlic, salt, Italian seasoning, and pepper; cook 1 minute.
Add onions, carrots, celery, barley, tomato paste, bay leaves, and beef broth to the slow cooker. Stir well.
Cover and cook on low for 6-8 hours or high for 3-4 hours until vegetables and barley are tender.
Stir in fresh parsley, season to taste, and serve hot.
Notes
For a richer flavor, let the soup simmer longer or add a splash of red wine during cooking.
