Instructions
Pat beef chunks dry, season with salt and black pepper. Sear in hot oil until browned, about 2-3 minutes per side.
Place halved potatoes in slow cooker, add seared beef, onion, and carrots if using.
Melt butter, stir in garlic, herbs, red pepper flakes, and parsley to make garlic butter sauce.
Pour beef broth over ingredients, drizzle garlic butter sauce, then cover and cook on LOW for 7-8 hours or HIGH for 4-5 hours.
Adjust seasoning, thicken sauce if needed, then transfer to serving platter, garnish with parsley, and serve warm.
Notes
For a richer flavor, let the sauce sit uncovered for 15 minutes or mash some potatoes into the broth to thicken.
