Ingredients

Meat

  • 2.5 lbs beef chuck roast (cut into large chunks)
  • 2 tbsp olive oil (for searing, optional)

Butter and Aromatics

  • 6 tbsp unsalted butter (melted)
  • 5 cloves garlic (minced)
  • 1 tsp dried Italian herbs (or thyme, oregano, basil)
  • 1/2 tsp crushed red pepper flakes (optional)
  • 0.25 cup fresh parsley (chopped plus more for garnish)

Vegetables

  • 2 lbs baby Yukon Gold potatoes (halved)
  • 1/2 cup low-sodium beef broth
  • 1 medium onion (sliced, optional)
  • 1 cup carrots (chopped, optional)

Instructions 

  • Pat beef chunks dry, season with salt and black pepper. Sear in hot oil until browned, about 2-3 minutes per side.
  • Place halved potatoes in slow cooker, add seared beef, onion, and carrots if using.
  • Melt butter, stir in garlic, herbs, red pepper flakes, and parsley to make garlic butter sauce.
  • Pour beef broth over ingredients, drizzle garlic butter sauce, then cover and cook on LOW for 7-8 hours or HIGH for 4-5 hours.
  • Adjust seasoning, thicken sauce if needed, then transfer to serving platter, garnish with parsley, and serve warm.

Notes

For a richer flavor, let the sauce sit uncovered for 15 minutes or mash some potatoes into the broth to thicken.
