Instructions
Mix flours, yeast, salt, herbs, and sugar. Add olive oil and water, then knead for 2 minutes.
Form dough into a ball, place in oiled bowl, cover, and let rise for 1 hour.
Divide dough into 4 balls, flatten to 5 mm thickness.
Cook each flatbread in a skillet for 3 minutes per side.
Spread pesto on flatbreads, top with smoked salmon and chopped parsley. Serve.
Notes
Use fresh herbs for best flavor and serve immediately.
