Instructions
Heat olive oil in a large skillet and sauté diced onion and minced garlic until fragrant.
Add ground turkey and cook until browned, then stir in cumin, chili powder, paprika, salt, and pepper.
Mix in green chiles, diced tomatoes, salsa, black beans, corn, and diced red bell pepper. Cook for 5 minutes.
Combine cooked rice with the turkey mixture, then transfer to a baking dish. Top with shredded Monterey Jack cheese.
Bake at 375°F (190°C) for 20-25 minutes until cheese is melted and bubbly. Serve with a dollop of sour cream and chopped cilantro.
Notes
For extra flavor, garnish with additional cilantro or a squeeze of lime.
