A vibrant and nutritious Spanish-inspired scramble packed with vegetables, chickpeas, and flavorful spices.

Ingredients

Vegetables & Seasonings

  • 2 tbsp extra virgin olive oil
  • 1 small onion
  • 4 cloves garlic
  • 1 red bell pepper red bell pepper
  • 1 green bell pepper green bell pepper
  • 0.5 tsp sweet smoked Spanish paprika ((1.25 grams))
  • 1 tsp dried oregano ((1 gram))
  • 3 oz fresh spinach ((100 grams))
  • 15.5 oz can chickpeas ((440 grams))

Eggs & Cheese

  • 6 cage-free organic eggs eggs
  • 2 tbsp finely grated Manchego cheese ((12 grams))
  • pinch sea salt sea salt
  • dash black pepper black pepper

Garnish

  • to taste fresh parsley fresh parsley (for garnish)

Instructions 

  • Chop onion, garlic, bell peppers, and spinach; rinse chickpeas; beat eggs with salt and pepper.
  • Heat oil in a pan, sauté vegetables (except spinach) for 4-5 minutes, add paprika and oregano, then spinach until wilted.
  • Add chickpeas, season, then pour in eggs; cook and stir until eggs are set, about 2-3 minutes.
  • Transfer to a serving dish, sprinkle with Manchego cheese and parsley, and serve.

Notes

Use fresh vegetables for best flavor and texture.
