Instructions
Chop onion, garlic, bell peppers, and spinach; rinse chickpeas; beat eggs with salt and pepper.
Heat oil in a pan, sauté vegetables (except spinach) for 4-5 minutes, add paprika and oregano, then spinach until wilted.
Add chickpeas, season, then pour in eggs; cook and stir until eggs are set, about 2-3 minutes.
Transfer to a serving dish, sprinkle with Manchego cheese and parsley, and serve.
Notes
Use fresh vegetables for best flavor and texture.
