Ingredients

Meat and Spices

  • 3 pounds Ground turkey
  • 4 individual Chipotle peppers, minced
  • 1 tablespoon Chili powder
  • 1 tablespoon Cumin
  • 2 teaspoons Salt

Vegetables and Dairy

  • 4 cups Chopped veggies
  • 1 1/2 cups Plain Greek yogurt
  • 2 cups Shredded Mexican blend cheese
  • 14 ounces Pinto or black beans
  • 1 cup Chicken broth
  • 1 tablespoon Oil

Instructions 

  • Cook turkey with onions, spices, chipotle peppers, and salt until browned; set aside.
  • Sauté vegetables with oil and spices until soft; add broth, beans, meat, cheese, and yogurt; stir until creamy.
  • Fill tortillas with 1/2 cup of filling, fold, and wrap for storage or serving.
  • To serve, microwave for 5 minutes or reheat in oven or skillet until hot and golden.
