Ingredients

Protein

  • 1 lb Boneless, skinless chicken thighs
  • 2 tablespoons Olive oil
  • 4 cloves Garlic, minced
  • 1 teaspoon Red pepper flakes (Adjust to taste)
  • 1 tablespoon Soy sauce
  • to taste Salt
  • to taste Pepper
  • 1 cup Jasmine rice
  • 2 cups Water
  • 1 tablespoon Coconut oil (Or any cooking oil)
  • ½ cup Mayonnaise
  • 2 tablespoons Chili paste (Adjust to taste)
  • 1 tablespoon Lime juice
  • 1 teaspoon Honey (Optional)
  • to taste Fresh cilantro, chopped
  • to taste Sliced green onions
  • to taste Lime wedges

Instructions 

  • Cook jasmine rice with water until tender, about 15 minutes.
  • Season chicken thighs with soy sauce, salt, pepper, and red pepper flakes. Cook in a skillet with olive oil until browned and cooked through, about 8-10 minutes.
  • Mix mayonnaise, chili paste, lime juice, and honey to make the creamy chili sauce.
  • Assemble bowls with rice, sliced chicken, and top with cilantro, green onions, and lime wedges. Drizzle with the spicy chili sauce.
