A flavorful and spicy bowl combining tender tilapia, seasoned rice, and fresh toppings for a satisfying meal.

Ingredients

Protein

  • 2 filets Tilapia Filets

Cooking Staples

  • 2 tablespoons olive oil
  • 1/2 teaspoon cumin
  • ¼ teaspoon cayenne pepper
  • 1 teaspoon Mexican chipotle chili powder
  • 1/2 yellow onion yellow onion, chopped
  • 1/2 can Rotel tomatoes
  • 1 can (15.25 oz) sweet corn
  • 1 can (15 oz) black beans
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 avocado avocado, cut in small pieces

Rice & Broth

  • 2 cups basmati rice
  • 4 cups chicken stock
  • 2 tablespoons butter
  • 1 teaspoon organic chicken bouillon

Dressing & Toppings

  • 1/4 cup ranch dressing
  • 1/4 cup sour cream

Instructions 

  • Cook rice with butter and bouillon in a pot until lightly browned, then add stock, bring to boil, cover, and simmer for 20 minutes.
  • Mix spices, pat tilapia dry, coat with spice mixture, then cook in heated oil for 3-4 minutes per side until flaky and white.
  • Sauté onions, corn, garlic powder, and pepper in skillet for 4-5 minutes until onion is soft.
  • Add beans, Rotel, and tilapia to the skillet, stir well, then assemble bowls with rice, tilapia mixture, avocado, and drizzle with dressing.
  • Serve immediately and enjoy!

Notes

For extra flavor, add fresh cilantro or lime juice before serving.
