Instructions
Cook rice with butter and bouillon in a pot until lightly browned, then add stock, bring to boil, cover, and simmer for 20 minutes.
Mix spices, pat tilapia dry, coat with spice mixture, then cook in heated oil for 3-4 minutes per side until flaky and white.
Sauté onions, corn, garlic powder, and pepper in skillet for 4-5 minutes until onion is soft.
Add beans, Rotel, and tilapia to the skillet, stir well, then assemble bowls with rice, tilapia mixture, avocado, and drizzle with dressing.
Serve immediately and enjoy!
Notes
For extra flavor, add fresh cilantro or lime juice before serving.
