Delicious savory muffins packed with spinach and feta, perfect for breakfast or snacks.

Ingredients

Dry ingredients

  • 2 cups Flour (300 gm)
  • 1 teaspoon Baking powder
  • 2 teaspoons sugar
  • 1 teaspoon Salt

Wet ingredients

  • 1 cup Milk
  • 1/2 cup Oil
  • 2 eggs Eggs
  • 2 tablespoons sugar

Spinach and Feta

  • 250 gm Frozen Spinach (thawed and drained)
  • 100 gm Feta cheese (cut into small cubes)

Frosting

  • 200 gm Herbal cream cheese
  • 4 tablespoons Milk (for frosting)

Instructions 

  • Preheat oven to 180°C and prepare a muffin tin with 12 liners.
  • Drain thawed spinach thoroughly and cut feta into small cubes.
  • Mix dry ingredients, then add wet ingredients and mix until smooth.
  • Fold in spinach and feta, then divide batter into liners and bake for 20-25 minutes.
  • Mix cream cheese with milk for frosting, pipe over muffins, and decorate with parsley.

Notes

Ensure spinach is well drained to prevent soggy muffins.
