Instructions
Rinse the rice under cold water until clear.
Heat olive oil, cook garlic and onion until soft.
Add rice, stir for 2 minutes to toast.
Pour in tomatoes and broth, add spices, simmer 20 minutes, then rest 5 minutes.
Season steak, sear in butter and oil until browned, about 4-5 minutes per side.
Fluff rice, serve topped with steak, cheese sauce, cilantro, with tortillas on the side.
Notes
Use fresh cilantro for best flavor and adjust seasoning to taste.
