A moist and flavorful tea cake featuring fresh strawberries, almond, and orange flavors, perfect for a light dessert or tea time treat.

Ingredients

Fruits and liquids

  • 1 cup fresh strawberries, hulled and sliced or diced
  • 2 tablespoons freshly squeezed orange juice
  • ½ teaspoon orange zest

Eggs and extracts

  • 3 eggs room temperature eggs
  • ¾ cup brown sugar
  • ½ cup vegetable oil
  • tablespoons pure vanilla extract
  • ¼ teaspoon almond extract

Flours and leavening agents

  • cups all purpose flour
  • ¾ cup almond flour or almond meal
  • teaspoons baking powder
  • 1 teaspoon baking soda
  • teaspoon salt

Toppings

  • ½ cup sliced almonds

Instructions 

  • Preheat oven to 350°F (175°C). Grease pan and line with parchment.
  • Mix dry ingredients: flour, almond flour, salt, baking powder, baking soda.
  • Beat eggs, oil, sugar, vanilla, orange juice, and zest until combined.
  • Fold dry ingredients into wet, then add half of strawberries.
  • Pour batter into pan, top with remaining strawberries and almonds, then bake 25-30 mins.

Notes

For best results, serve with a dusting of powdered sugar or a dollop of coconut cream.
