A delicious and wholesome breakfast baked with fresh strawberries and warm spices, perfect for starting your day.

Ingredients

Dairy & Fats

  • 1 small knob butter (for greasing)
  • ¼ cup melted butter (make sure it’s not too hot)

Dry ingredients

  • 2 cups rolled oats
  • 1 tsp baking powder
  • ½ tsp ground cinnamon

Wet ingredients

  • 2 large eggs
  • ¼ cup maple syrup
  • ¼ cup melted butter (not too hot)
  • 1 tbsp vanilla extract
  • ¼ tsp fine sea salt

Liquid

  • 2 cups milk (almond or cashew milk)

Fruits

  • 2 cups chopped fresh strawberries

Optional topping

  • 2-3 tbsp turbinado sugar (optional)

Instructions 

  • Preheat oven to 375F (190C). Grease a 12x8-inch dish with butter.
  • Mix oats, baking powder, and cinnamon. Whisk eggs, maple syrup, melted butter, vanilla, and salt. Add milk and dry ingredients, then fold in strawberries.
  • Pour batter into dish, sprinkle with sugar if desired, and bake for 45-50 minutes until golden.
  • Let rest for 5-10 minutes, then cut into 6 squares and serve.

Notes

For extra flavor, top with fresh berries or a drizzle of honey.
