Delight in these luscious cookies layered with homemade strawberry jam and creamy cheesecake filling for a perfect treat.

Ingredients

Cheesecake Filling

  • 6 oz cream cheese, cold
  • 3 tbsp granulated white sugar
  • 1/2 tsp vanilla

Strawberry Jam

  • 12 oz fresh strawberries, hulled and finely diced
  • 1/4 cup granulated white sugar

Cookie Dough

  • 2 3/4 cups all-purpose flour, spooned and leveled
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup granulated white sugar
  • 1 cup unsalted butter, very softened
  • 1 egg at room temperature
  • 2 tsp vanilla
  • 1/4 cup granulated white sugar, for rolling dough in

Instructions 

  • Mix cold cream cheese, sugar, and vanilla until fluffy. Scoop into discs and freeze.
  • Cook diced strawberries with sugar over medium heat until thickened to make jam. Chill.
  • Preheat oven to 350°F (175°C). Whisk together flour, baking powder, baking soda, and salt.
  • Cream softened butter and sugar until fluffy. Add egg and vanilla; mix well.
  • Combine dry ingredients with wet mixture. Layer dough with jam and frozen filling, shape into cookies.
  • Roll in sugar and bake for 11–12 minutes until lightly golden.

Notes

Chill the cheesecake filling thoroughly for best results.
