fresh strawberries, hulled and finely diced

Instructions
Mix cold cream cheese, sugar, and vanilla until fluffy. Scoop into discs and freeze.
Cook diced strawberries with sugar over medium heat until thickened to make jam. Chill.
Preheat oven to 350°F (175°C). Whisk together flour, baking powder, baking soda, and salt.
Cream softened butter and sugar until fluffy. Add egg and vanilla; mix well.
Combine dry ingredients with wet mixture. Layer dough with jam and frozen filling, shape into cookies.
Roll in sugar and bake for 11–12 minutes until lightly golden.
Notes
Chill the cheesecake filling thoroughly for best results.
