Delight in these soft, strawberry-flavored cookies with a hint of vanilla and a crunchy sugar coating, perfect for a sweet treat.

Ingredients

Strawberry

  • 1 ¼ cups freeze-dried strawberries (divided)
  • 2 cups all-purpose flour
  • ¾ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter (softened to room temperature)
  • 1 cup powdered sugar
  • 1 large egg (room temperature preferred)
  • ¼ cup vegetable oil (56 mL)
  • 2 teaspoons vanilla extract
  • ½ cup granulated sugar

Instructions 

  • Preheat oven to 350ºF (177ºC). Line baking sheet with parchment or silicone mat.
  • Process ½ cup of strawberries into a chunky powder; set aside 1-2 tbsp for coating.
  • Mix dry ingredients with ½ cup strawberry powder. Cream butter and powdered sugar until fluffy. Add egg, oil, vanilla; mix well.
  • Gradually add dry ingredients to wet, mixing until just combined. Chill dough if needed.
  • Combine remaining strawberry powder with granulated sugar. Scoop dough, roll in sugar mixture, place on baking sheet.
  • Bake 8-9 minutes until edges are set. Cool briefly, then transfer to wire rack. Store in airtight container.

Notes

For best flavor, use high-quality freeze-dried strawberries and ensure butter is softened.
