Instructions
Preheat oven to 350ºF (177ºC). Line baking sheet with parchment or silicone mat.
Process ½ cup of strawberries into a chunky powder; set aside 1-2 tbsp for coating.
Mix dry ingredients with ½ cup strawberry powder. Cream butter and powdered sugar until fluffy. Add egg, oil, vanilla; mix well.
Gradually add dry ingredients to wet, mixing until just combined. Chill dough if needed.
Combine remaining strawberry powder with granulated sugar. Scoop dough, roll in sugar mixture, place on baking sheet.
Bake 8-9 minutes until edges are set. Cool briefly, then transfer to wire rack. Store in airtight container.
Notes
For best flavor, use high-quality freeze-dried strawberries and ensure butter is softened.
