Ingredients

Crust and topping

  • 1 1/2 cups old-fashioned rolled oats
  • 1 1/4 cups all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, cold and cubed

Filling

  • 3 cups fresh strawberries, chopped (or frozen)
  • 1/3 cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch
  • 1 tablespoon water

Instructions 

  • Preheat oven to 375°F (190°C). Line an 8x8-inch pan with parchment.
  • Mix oats, flour, sugars, baking soda, and salt. Cut in cold butter until crumbly.
  • Reserve 1 cup of crumble for topping. Press remaining into pan and bake 10-12 mins.
  • Cook strawberries, sugar, and lemon juice until thickened. Mix cornstarch with water and add to filling.
  • Spread filling over crust, sprinkle with reserved crumble, and bake 20-25 mins. Cool before slicing.

Notes

Use fresh strawberries for best flavor. Keep refrigerated.
