Delight in these homemade ice-cream sandwiches with fresh strawberries and a crunchy biscuit coating, perfect for a summer treat.

clotted cream vanilla ice cream

strawberries hulled and roughly diced

pack freeze-dried strawberries
Instructions
Blend the ice cream with chopped strawberries until evenly mixed.
Spread the mixture in a lined tin and freeze until solid, about 2 hours.
Cut the frozen ice cream into 10 circles using a biscuit or cutter.
Sandwich each ice cream circle between two biscuits and coat with crumbled freeze-dried strawberries. Refreeze for 1 hour before serving.
Notes
For easier cutting, keep the ice cream firm and work quickly.
