Delight in these homemade ice-cream sandwiches with fresh strawberries and a crunchy biscuit coating, perfect for a summer treat.

Ingredients

Dairy

  • 1 litre clotted cream vanilla ice cream

Fruits

  • 200 g strawberries hulled and roughly diced

Baked Goods

  • 20 round shortcake biscuits

Snacks & Add-ons

  • 7 g pack freeze-dried strawberries

Instructions 

  • Blend the ice cream with chopped strawberries until evenly mixed.
  • Spread the mixture in a lined tin and freeze until solid, about 2 hours.
  • Cut the frozen ice cream into 10 circles using a biscuit or cutter.
  • Sandwich each ice cream circle between two biscuits and coat with crumbled freeze-dried strawberries. Refreeze for 1 hour before serving.

Notes

For easier cutting, keep the ice cream firm and work quickly.
