Stuffed Peppers with Rice

Enjoy these flavorful stuffed peppers filled with seasoned ground meat, rice, and cheese, baked to perfection.

Ingredients

Bell Peppers

  • 6 large bell peppers (red, yellow, or green)

Ground Meat

  • 1 lb ground beef or turkey

Rice

  • 1 cup cooked rice (white or brown)

Onion

  • 1 small small onion (finely chopped)

Garlic

  • 2 cloves cloves garlic (minced)

Diced Tomatoes

  • 1 can (15 oz) diced tomatoes, drained

Cheese

  • 1 cup shredded mozzarella or cheddar cheese

Seasoning

  • 1 tsp Italian seasoning

Salt and Pepper

  • to taste Salt and pepper

Tomato Sauce

  • 2 cups tomato sauce

Instructions 

  • Preheat oven to 375°F (190°C).
  • Cut off tops of peppers, remove seeds and membranes.
  • Cook ground meat with onion and garlic until browned. Mix with rice, tomatoes, seasoning, salt, and pepper.
  • Stuff peppers with mixture, place in baking dish, pour tomato sauce over, cover, and bake 35–40 minutes.
  • Uncover, add cheese, bake 10–15 minutes until bubbly. Rest 5 minutes before serving.

Notes

For a vegetarian version, substitute ground meat with beans or vegetables.
