Enjoy these flavorful stuffed peppers filled with seasoned ground meat, rice, and cheese, baked to perfection.
Ingredients
Bell Peppers

bell peppers (red, yellow, or green)
Ground Meat

ground beef or turkey
Rice

cup
cooked rice (white or brown)
Onion

small onion (finely chopped)
Garlic

cloves garlic (minced)
Diced Tomatoes

can (15 oz)
diced tomatoes, drained
Cheese

shredded mozzarella or cheddar cheese
Seasoning

Instructions
Preheat oven to 375°F (190°C).
Cut off tops of peppers, remove seeds and membranes.
Cook ground meat with onion and garlic until browned. Mix with rice, tomatoes, seasoning, salt, and pepper.
Stuff peppers with mixture, place in baking dish, pour tomato sauce over, cover, and bake 35–40 minutes.
Uncover, add cheese, bake 10–15 minutes until bubbly. Rest 5 minutes before serving.
Notes
For a vegetarian version, substitute ground meat with beans or vegetables.
