  • 4 medium bell peppers (any color, seeded and halved)
  • 1.5 pounds lean ground beef
  • 1.5 cups taco seasoning mix (use gluten free if needed)
  • 0.75 cup water
  • 1.5 cups cheddar cheese
  • 1 cup sour cream
  • 0.5 cup salsa

Instructions 

  • Preheat oven to 350°F (175°C). Prepare a baking dish and microwave peppers with water for 5-6 minutes.
  • Brown ground beef in a skillet, add taco seasoning and water, simmer until thickened.
  • Mix cooked beef with sour cream, salsa, and 1 cup cheese.
  • Fill peppers with beef mixture, top with remaining cheese, and bake for 20-30 minutes.
