Ingredients

Protein

  • 1 lbs turkey breast (diced)

Vegetables

  • 2 long red peppers long red peppers sliced
  • 2 cousa squash cousa squash (sliced into rounds)
  • 4 medium potatoes medium potatoes (cut in wedges)
  • 1 large onion large onion cut into rings
  • 3 garlic cloves garlic cloves (sliced)

Seasonings & Oils

  • 0.5 cup olive oil
  • 1 tsp coriander
  • 1 tsp dry dill
  • 1 tsp dry thyme
  • 1 tsp dry basil
  • 0.5 tsp paprika
  • 0.25 tsp pepper
  • 0.5 tsp salt
  • 2 tbsp brown sugar
  • 0.5 lemon lemon juice (from half lemon)

Instructions 

  • Preheat oven to 400°F (200°C).
  • Place turkey and vegetables in a baking dish.
  • Mix sugar, spices, olive oil, and lemon juice in a small bowl.
  • Pour mixture over turkey and vegetables; gently coat with a bamboo spatula.
  • Bake for 20-25 minutes until golden brown.
